A flavoursome Sardinian delicacy, this prosciutto is cured from local island lambs who graze the upland meadows. The tender meat is rolled in crushed fennel seeds, herbs and pepper then cured for 4/5 months. Try with traditional Sardinian vegetables like wild thistles and artichoke hearts, or a crisp salad dressed with balsamic vinegar.
