Mortadella

A speciality from Emiglia Romagna, studded with pistacchio nuts and flavoured with peppercorns, garlic and herbs. The large salumi are baked slowly in the dry air of brick ovens according to a 14C tradition to develop the characteristic sweet flavours and colour. Serve finely sliced large discs with other cold meats and good rustic bread. Delicious.
