Wild Boar Salame

This traditional Sardinian horse-shoe shaped salame is very lightly smoked, flavoured with garlic and has a fairly coarse texture. The wild boar is mixed with pork to soften it and enable all the flavours to come through. It stands up on its own and is a firm favourite at drinks parties or on charcuterie boards alike.
